
Ann-Marie’s Jamaican Jerk Paste Marinade
This paste is about a level nine out of ten on the spicy scale. Like the jerk
sauce, it is also full bodied with notes of ginger, garlic, onions, and pimento coming through. The difference is the paste is ten times more intense than the jerk sauce.
Ann-Marie’s Jamaican Jerk Paste is a great marinade for larger cuts of meat such as beef roasts, briskets, whole chicken or turkey, whole fish, rack of lamb, etc. This paste is also an excellent flavour enhancer for other marinades, gravies, and as an infuser for other sauces!
