Baek (white) Kimchi
Traditionally Tong Baechu 'whole cabbage' Kimchi (통배추김치) is made by cutting napa cabbage and stuffing the seasoning between the leaves. In our Jiak kimchi, napa cabbages, daikon radishes and carrots are cut into bite-size pieces and then mixed with the seasoning.
Baek Kimchi 백김치 (White Kimchi) is a non-spicy kimchi variety that tastes mild and refreshing. It’s particularly popular amongst kids and people cautious of spicy foods. Unlike spicy kimchi made with Korean chili flakes (gochugaru), Baek Kimchi doesn’t use any chili flakes. Instead, it is submerged in fruity, salty brine.
