Winemaking:
The grapes were picked over three days in a one week time span based on clonal ripeness and then cluster sorted before crushing and destemming to stainless steel fermentation vessels. The fermentation was conducted with a cultured yeast isolated from Burgundy over a total maceration time of 21 days prior to gentle basket pressing, settling and racking to Burgundy format French oak cooperage for nine months elevage (22% new, 65% neutral, 13% stainless steel). The clonal blend is comprised of 46% clone 777, 30% clone 115, 24% clone 667. Full malolactic conversion with minimal filtration at bottling.
Tasting Notes:
The wine is pale garnet in colour. The nose presents a perfumed complexity of red currant, earth, and spice nuances of cinnamon and star anise. The palate is midweight with an elegant presentation of red currant and spice notes framed by a dusty yet soft tannin structure that leads to medium long, fresh finish.
