Chả Sống - Vietnamese Raw Pork Paste
Chả Sống or Giò Sống is a traditional raw pork paste used in Vietnamese cuisine. It is a very versatile ingredient used in a wide range of dishes like fried springs rolls (chả giò), wontons (hoành thánh), pork and mushroom noodle soup (bún mọc) and stuffed bitter melon soup (canh khổ qua). It is essentially the raw form of Chả Lụa, a style of uncured pork sausage in Vietnamese cuisine which is wrapped in banana leaves and steamed.
