In Kolkata, spring mornings smell of lemongrass brushed by fragrant mist and sun‑ripened lemons piled high in old school bazaars (markets). During family holidays, young Ria would gather fallen lemon blossoms while her father brewed light Darjeeling tea over a charcoal stove. He’d add curls of peel, slivers of ginger, and a scatter of fennel—creating a bright tonic they called “sunshine water.”
When Ria moved to North America, she carried these blossoms in a pressed diary page. On her first Canadian spring, she blended them with heritage Darjeeling and a dash of fennel, bottling that crisp Himalayan dawn.
