Grass fed Organic Ryazhenka
Ryazhenka, a traditional Ukrainian cooked and fermented milk, popular in Ukraine, Russia and Belarus. We slow cook Jersey cow milk thickening and caramelizing it to bring out its natural milky sweetness. We then inoculate the milk with Kefir bacteria. Our Ryazhenka is the only traditionally made Ryazhenka in the market, it is also the only certified Grass Fed and Organic Ryazhenka in Ontario. Additionally it is the only Ryazhenka made of Jersey Cow milk and consequently has up to 30% more protein than regular Holstein cow milk. Jersey milk is also 20% higher in calcium and richer in micronutrients; minerals and vitamins (the golden hue of Jersey milk is due to its high beta carotene levels). Jersey cows produce A2 protein milk which some find easier to digest. The Ryazhenka has a cream top as we do not homogenize the milk; several studies have claimed that non-homogenized milk does not contribute to arteriosclerosis.
