We’ve transitioned from whole bulbs to peeled cloves, as we discover that peeled cloves may support higher antioxidant activity. Removing the outer skin allows for more even heat and humidity exposure during the aging process, promoting a more consistent Maillard reaction and enhancing beneficial compounds such as S-allyl cysteine and polyphenols (as shown in studies like Kim et al., 2012 and Bae et al., 2014).

We work closely with local organic farmers to ensure every garlic clove comes from clean, nutrient-rich soil, grown without sprays—resulting in truly high-quality black garlic. Each batch is slowly aged between 15 to 40 days to develop its signature depth of flavour and soft, jam-like texture.
