Palatine Hills Wild & Free Merlot Wine

The final of four premier reds released from our new Wild & Free (Reserve) Series. 100% estate-grown Merlot. Only 220 cases made. Made in Niagara, this single-vineyard reserve comes from the fields very close to Lake Ontario and has fully embraced the hot and dry finish to the 2017 vintage. Harvested at 23 brix, this beautiful Cabernet was cold soaked for 5 days then fermented on the skins for another 2 weeks. It was slowly aged and allowed to mature in an mix of French and American oak barrels for 14 months. From here, only the barrels that were deemed outstanding and expressed what it means to be “Wild & Free” were selected to make the cut for the 220 case allotment. This wine showcases a perfect balance between fruit and tannin that allows it to pair exceptionally well with steak and other red meat dishes.
