Romesco sauce

This traditional Spaniard sauce from the region of Catalonia was originally used as an accompaniment to fish by local fisherman. It's a rich sauce, made with charred peppers, roasted garlic, sundried tomatoes and toasted almonds which adds to its unique flavor profile. Because of its pesto-like consistency, it is also widely used to make pasta dishes, a spread or a base for pizza.
